Almond flour vs. almond meal

Almond flour is usually made from blanched (skinless) almonds ground very fine. Almond meal is typically ground from whole almonds with the skins on and has a coarser texture. King Arthur Baking's chart lists almond meal at about 84 g per cup, lighter than almond flour's 96 g.

The two can often stand in for each other in rustic recipes like crumb toppings and some cookies, but almond flour gives smoother, more delicate results in cakes and macarons.
